~Happy Labor Day & Prayers For The Gulf Coast~

I want to wish all of you a Happy Labor Day....get out and enjoy your day! We will be attending a church pic-nic, lots of food and games all day. Later that evening... Down Town Knoxville has a Fire Works Show....I think I heard on the news....it's the 3rd largest show in the Nation....Known as Booms Day.... Thousands of people will attend, however we haven't decided yet if we will go this year. Hope whatever you all do...you have a great time! Okay, bet your wondering what's up with this picture? This is a sneak peek at a home tour, I will be showing you next week....this house is 9,400 sq ft and it could yours....it's for sale for 1.2 million. I got to attend the open house, and they let me take pictures....thank goodness, I had my camera with me!!! Six stacked stone fire places, a To Die For Gorgeous Kitchen, 6.5 bathrooms, and a sauna. You all will enjoy this one! Come back next week for the GRAND TOUR.

~Pea Pickin Cake~

This cake is lip smacking good!! The other day, when I was going through all those cookbooks and recipes, I came across this one....I have no idea where the name of this recipe came from, so if anyone knows please inform me....Why is it call ~Pea Pickin Cake~ ??? It has nothing to do with Peas. If you like pineapple upside down cake, you will love this one....I call it the cold/fridge Pineapple Cake. It is the perfect summer cake, so with one more holiday left this Summer ~Labor Day~ I thought I would pass this delish cake recipe along. It's easy and moist, I promise if you make it once, you will make it again! ~Recipe and instructions below~

~Here's all you need~
Box of Yellow cake mix
11oz. can of Mandarin Oranges with juice
3/4 cup cooking oil
4 eggs
Mix all these together....DO NOT drain oranges...mix with juice
Pour into 3~ 8in or 9in round cake pans and bake till done...I bake mine on 325 because my pans are dark, but 350 if your pans are not dark....just watch...you will know when done...aprox 20-25 min. Let cakes COOL completely....while cooling you can make filling......
~Filling~ Large cool whip...thawed
1 20 oz can crushed pineapple with juice
1 small box instant vanilla pudding....I have used the large box before...it works also.
Mix all three of these ingredients together and refrigerate for 2-3 hrs.
Note: DO NOT mix any milk with your pudding...the juice from the pineapple will do the trick. Also, I don't use the whole container of cool whip...why....I think its too much....I cut it back because I always have some of this filling left, the boys will always eat any extra cool whip left over...lol.


After the filling is ready and cake has cooled.....spread it between layers....you know the procedure....:) I always top mine with cherries.You need to put the cake back into the fridge for a few hrs....It's even better the next day. Hope you all enjoy it. It really is a delight....Oh, speaking of Light....You can cut SOME calories by using Light ingredients....I did not....because my diet doesn't start till MONDAY....lol;) Nancy

Born To Shop, Forced To Cook~ Girls, I like to Cook, but I love to Shop! Yesterday, I went to visit Vanessa at http://lawsymercy.blogspot.com/ she had posted that she was a CookBookAholic, and let me tell you, I believe her, boy does that girl have the cook books! So, here you go Vanessa, this is for you girl..I don't have near the cook books that she has, but I do have some good ones. Hope y'all enjoy my little cook book tour......and girls, get out those cook books and let us see them. Nancy

This is the cabinet that I keep my cook books in....we bought this about 5 yrs ago at a antique store over in Clinton, TN.....It's just the perfect spot for those books!This little Boyd's Bear was given to me by a great friend.....she knows me like a book! It sits right in there with all those wonderful books.....lol



This is a recipe box that my mother bought YEARS ago, it's old and rusty....but the childhood memories of my mom going through that box are priceless....I begged her for it for years and finally she gave it to me.
This is a small collection of recipes from the Apple Barn....Girls, if you ever come to East Tennessee and go to Pigeon Forge......The Apple Barn is a must.....It is a restaurant that has the best home cooking you can by out!!! Be prepared to wait a long long time for a table....week nights are not as bad as weekends.
These are a few of the recipes that I keep planning to put into a personal scrap book, for myself, I need to get off this puter and get that done!


OH, my goodness....There's Ms Paula....Y'all know she can cook and I love her recipes. Every one of the ones I have made turned out perfect.....These are a must buy if you don't have them!
Here is another Hope Chest item given to me from my Grandmother....girls, this is soooo old and some of the recipes that my grandmother made out of this book, I still make today.
This is some of the recipes that are written in my Grandmothers hand write....I have them tucked into that book....another priceless treasure!

Hershey's knows how to cook....there is some great pie and cake recipes in this one!
Pampered Chef....WOW....they know how to do it too. Wish I had more of their books! ~Weekend Yard Sale Finds~ & ~Need Suggestions~

Good Morning Girls, I found some great finds Saturday! Yes, I hit a few Yard Sales Saturday Morning! We saw a couple of yard sales signs on Friday night, while we were out...so bright and early Saturday Morning we was up and at it. We hit the Jack Pot at the first sale...we was the first ones to arrive, and boy did they have some great stuff! Oh, WE is myself and hubby....he loves going to them just as much as I do! We had a great time that morning. We even went over to another part of town that we thought might have some great sales and they did. While there, we found a new Farmer's Market and of course I made some purchases there....I could not believe, that I had forgot to take my camera with me....OH, the pictures I could have taken at that farmers market....they had a place set up making Omelets, we had to have one since it was about 10:30am and we had not ate breakfast! It was soo gooood!
I am a little tired today....we had a fun, but busy weekend....Friday night, Alex's class, that he graduated with came over....then they ask us if they could come back on Saturday night...and of course, I said YES! I would rather them be here then anywhere else! Sunday morning and Sunday night we went to church......My house is a mess! I have got to get up from this puter and get busy cleaning and doing laundry! LOL:) I will be around to visit with all of you tonight!


~Here's the Loot from Saturday~Beautiful Yellow bowl, huge gold urn, small gold planter, humming birds, eye glass case, magazines and ice cream scoop~
~ This beautiful yellow bowl came from Pier 1, it still had the price tag on the bottom, I paid $4~

~This urn is probably my Great Find the tag on the bottom says $58.99......I got it for $5. It is absolutely Beautiful!! It's huge and heavy! Not sure what I will do with it....I am open for some suggestions.... Please leave me your suggestions in your comments. If I use one of them, I will post about it and put a link to your blog in the post. ~This is the price tag on the bottom of that urn~
~2 Beautiful Christmas Ornaments....These are huge ornaments! $1 each....can you believe that...what a deal!~Oh yes, I always look for magazines at sales....these were .10 cents each, and that ice cream scoop....I did not need, we have several good scoops, but hubby wanted it, we have already used it and I love it better then my Kitchen Aid scoop....that we paid too much for, but this one was only .50cents.~
The small planter was $1....the humming birds .50cents.....the eye glass case $1.50
Well, that sums up the great finds for this weekend. I hope you all had a great weekend! I want to thank everyone that came by for Pink Saturday.....It was a lot of fun, I enjoyed doing it and will probably do it again sometime.

For my Pink Saturday Post, I want to share Princess Emily's Pretty Pink Bedroom and Bathroom, and a few pictures of Emily too.


Girls, this is Emily Grace, AKA: ~Princess Emily~ Let me explain, I don't have any real nieces or nephews, I have one brother, but he and his wife never had any children. My hubby has a brother, and him and his wife have 2 BEAUTIFUL children, so I guess Emily is MY niece. I have two teenage boys, I never had a little girl, so I adore Emily. Maybe someday, I will have 2 daughter in laws, and then maybe I will have granddaughters too, but that's a while still yet, so I will enjoy Emily all I can!!! They grow up so fast and those toddler years are some of the best, I miss those days with the boys!!

~Chicken Salad~

~Unbelievable Chicken Salad~
Girls, this is the BEST chicken salad recipe I have ever had. The first time I had it was at a local Tea Room. Then not long after~ I received a catalog in the mail from~Through The Country Door~ many of you have probably seen this catalog. They always have very good and easy recipes in their catalog, and low and behold, they had this recipe in there....I knew it had to be the same as the chicken salad I had eaten at the Tea Room.....My SIL was working for the Tea Room, at the time, so I ask her about it and she said it was the same, except at the Tea Room, they add HONEY to the recipe, and believe me the honey makes the difference, I also use pecans, but you could use walnuts, I just like the pecans better. One thing I want to note: I think this chicken salad is better the next day, you can certainly eat it after making it and it is good then too. Lots of times when I make this I just make enough for me, I am the only one that eats it here. I just cut that recipe way down, kind of eye ball how much of the ingredients I want to use, I really don't think you could mess this salad up. Let me know if you try it and what you think....Nancy

~Here's the Recipe~
4 skinless, boneless chicken breasts, 1/2 cup cranraisins (dried cranberries), mayonnaise use as much mayonnaise as you like, 1 small pkg. chopped pecans, 1 tall stalk celery, honey to the taste you like, salt and pepper to taste~Boil chicken breasts until tender; drain and cool completely. Dice chicken into small bits. Stir in cranraisins, pecans, and celery. Mix in enough mayonnaise to make salad spreadable. Salt and pepper lightly. Refrigerate about 1 hour; stir again before serving.


This is one of my favorite foods to fix for parties and get togethers....It has always been a real WINNER! You won't be disappointed in this one.~

~It's A Back Porch Re-Do & A New Family Member~Ms. Birdie~

~It's like a new room in the house~ Girls, I am so excited to finally have this ROOM finished. We have lived in this house almost 4 years and I am just now getting the back porch/patio decorated. I would go shopping for pillows and try to pick out carpet but I never could make my mind up on what to choose. We have had the table and chairs for 3 years and had a black umbrella over it, but this spring the wind broke it, so lucky me...LOL:) had to go shopping to find a new one. I thought I would buy another black one, but I wanted a bigger one and I could not find a big black one. The one I bought, is a peach color, I never would have bought that color, but once again I said to myself..."you can always take it back if you don't like it" and the price was right at only $39.99, yes, Thirty-nine/99. I brought it home and loved the way it blended with the brick, and the size of it. Then off to Home Depot I went to look at their seat cushions for the 100th time this summer, again, I have looked at these same cushions so many times and just did not like them, did I think Home Depot would have something new, that I hadn't seen, I don't know, but that last trip made the difference , I saw these cushions and new they would be perfect. They are a perfect match for the brick, the orange flower in the print goes great with the new umbrella, and they are dark enough that they won't show dirt.:) Oh, did I mention they were 30% off and I had a coupon for an additional 20% off my total purchase, so the price was right again. Now, the flooring decision was the hardest, we thought about staining the concrete, we thought about tiling it, but I love carpet and there is some nice outdoor carpet these days...it's not like the days when all people had to chose from was outdoor green grass...nothing wrong with green grass carpet, if you like it....I like it for you, but I don't want it for me. My husband and his 2 brothers have a floor covering business here in Knoxville, and over the last couple of years I have took home more outdoor samples then you can shake a stick at...LOL, never have been able to make up my mind, but after putting every thing together, I decided on a color for the carpet that would not be took dark or too light, just a good neutral color and I love it....we just laid it loose, no glue went under the carpet, that way we can change it when ever we want to and it hasn't messed up the concrete underneath. I love it sooo much we have ordered it for the front porch and the side porches, it just gives a neat clean look to the floor.


The two lounge chairs are new, also a clearance item from Home Depot, they only had one at the time we bought them, however they had several at a Nashville store, and they were happy to ship one to Knoxville. :)



~These are the before pictures~ And, now the finished pictures, well almost, I have a clock and thermometer coming, hubby doesn't know that yet, he's not going to want me to put anything on that brick, but I will ask for forgiveness after I do it.....:)

Okay Girls, I need your help, these are the new lounge chairs, I would love to have monogrammed pillows for each of these chairs, Ballard's, are to $$$$$, but if I can't find them for less $$$, Ballard's it will be then. If any of you know of another source please let me know. :)

Well Girls, I have to tell you, I am really enjoying this new space, everytime I go past a window that over looks this porch, I take a peak and can't believe how much it now looks like another room in the house. As you can see, everyone is liking it.


Oh yes, here is the new member of the family. Ms Birdie...I have always wanted a real bird, but don't want to clean after one, so here is the next best thing...LOL:) Well, I have had Ms. Birdie for a while, but her home is new. I found her pretty new home at Carolina Pottery,she lives on the front porch, she loves it, she never complains, except she is looking for a Mr. Birdie, I told her to enjoy her single life as long as possible...LOL:) But, you all know that is birdie nature for Ms. to find Mr. or Mr. to find Ms. so I have a feeling Ms. Birdie is fixing to meet Mr. Birdie. Stay tuned for the rest of the story.

~Weekend Finds~

Okay Girls, After seeing what wonderful finds you all have been finding at yard sales and such, I thought I would go Saturday morning to a couple, I hadn't been a long time. The weather was very nice over the weekend here, highs around 83, very unusual for this time of year.....so why not enjoy a few sales. Later that day, I HAD to make that dreaded trip to Walmart, there just happens to be a Ross store in the same shopping center as Walmart, so I took a detour into Ross. Yes, I found another lamp I just had to purchase, it is animal print and I am nuts about animal prints and it was only $14.99, had no idea where it would go, could not think of a place I could put it, but I said to myself, "If you can't find a place for, you can always take it back", so that settled the dilemma, in the buggy it went....(yes, in TN they're called buggies...LOL:) I have set this lamp everywhere, for now it is staying here on the secretary....tomorrow, it will probably be somewhere else.
Love to look through the books at Ross and Marshall's. I found Oprah's Guide to life, bought it for $6.99 and the book below..... Ageless Beauty. Girls, aging is one thing that scares me crazy! It has become an obsession. When I saw the title of this book, I knew, I had to have it...for $3.99, I didn't have much to lose. Last night I read almost the whole book.....I love it! There is a Biological Age Test in the front of the book, I took it....added up my score, I am 45-49 years old.....not good at all, I am only 39....decided, its time to make some life changes!!! One of the many changes I have GOTTA stay out of that sun....so hard for me because I love the sun and love to be outside, next Walmart trip....I am buying some good sunscreen!!! This book is a must for all you gals hitting that 40 and over mark, just about 4 mos for me, it is full of exercise tips, diet tips, detox tips, and beauty tips from hair to toes!
This picture below is what we call....One great find....it is my yard sale find, it was brand new still in package, had a price tag from Dillard's for $30.00, I paid $5.00. It is the Aurthur Court name brand, very heavy, cheese/fruit tray with pewter bunnies, and it came with bunny knife. I just love bunnies.

~Friday Night With Friends~

~ Party Foods~

Good Afternoon~ I have some extra time this afternoon, so I thought I would do a quick post. Tonight, we are going to some friends house for supper, I thought I would take a ~Simply Elegant Fruit Pastry~ Well, that's what The Pampered Chef calls it...I call it Fruit Pizza. It is so good~thought I would share the recipe with you. Who doesn't enjoy a Pampered Chef recipe....every recipe I have ever fixed or had from them is delicious. There cook books are wonderful. They have so many wonderful recipes for finger foods, which happen to be one of my favorite types of foods. I have several recipes that I am going to be sharing with you next week. All are either pampered chef recipes or recipes that I have had at other parties. I think they are all winners, sometimes I just have to fix up my favorite party foods. Recipe for Simply Elegant Fruit Pastry~

1 Package of Pillsbury refrigerated pie crusts

1 Container (6ounces) blended fruit peach low-fat yogurt

1 Cup thawed, frozen whipped topping

1 Can (21 ounces) Comstock/Wilderness Peach Pie Filling

8 Ounces strawberries, hulled and sliced

2 kiwi, peeled and sliced~~~~I used 2, but I will use 3 next time

Preheat oven to 375. Lightly sprinkle large round stone with flour. Gently unfold one pie crust and place in center of baking stone. Unfold second crust and place over the first crust, matching edges and pressing to seal. Using a roller, roll crusts to edge of baking stone. Fold 1/2 inch of crust edge under, forming an even border, press to seal seam. Flute edge. Bake 20-25 minutes or until golden brown. Cool completely.

Fold yogurt and whipped topping together. spread evenly over crust.

Begin with peach slices going around pizza, then kiwi, then strawberries, just continue this.

Take remaining glaze from peaches and drizzle over pizza.

Store in fridge.







~This is the ingredients you will need~ I would add one more kiwi.~ ~See this roller, it was hand made by my Great Grandfather, it was given to me by Grandmother for my Hope Chest~ Wouldn't take anything for it!~ I will have to do a post on Hope Chests.

~It's A Thrifty Party~

It's so hard to narrow it down, but here are a few of the ones I have found over the years. Thanks Rhoda for having such a fun Party. Nancy This is a needlepoint footstool I found at an estate sale several years ago. I paid $10 for this jewel.
Picture frame bought at a sale my DSL had. Paid $1....I love it and of course that's me and DH in both pictures.
These plates all came from different yard sales. Can't remember what I paid, but I am sure it wasn't much.
This little table came from a flea market sale, I bought 2 of them and ended up saling one of them to DSL in one of my yard sales. I think I have too much on it but that's the only place I have to put some of my white collection, need something bigger....need to go to more sales...lol:)

~Mayonnaise Rolls~Orange Spice Tea~Few Pretty Pictures~

Good Morning! Hope everyone is enjoying your Summer, even if it is smouldering hot. lol:) I have been so busy lately, that I just haven't had time to post. When I do have computer time I spend it visiting so many of you. I want to tell you all how much I enjoy your blogs. I have had a couple of people want the recipe to the rolls I fixed in another post. Here it is...Mayonnaise Rolls....2cups self rising flour....2Tbsp. mayonnaise, I use about 3 Tbsp instead of 2....1cup of milk... Mix and spoon into greased muffin pans and bake at 400 until golden brown....Makes 12 rolls~told you all it was easy! Next......Tea Time....This is one of my favorite teas, if you've never tried it, you need to, it is wonderful. Hot or cold! I like it cold in the Summer and hot in the Winter.




Here is a few pretty pictures....maybe to give you a little inspiration for these dog days of Summer....when you don't want to do a thing....I have the hardest time finding energy to do anything when it is so hot.This little pretty ceramic fruit basket was given to me about 27 years ago, by my Aunt Alice, she told me to put it into my hope chest. Did any of you have a hope chest? I did, it was a big deal in my family when you turned about 11 years old you was given stuff from every Aunt, Great Aunt, and Grandmother to put in your hope chest. Oh, the memories!!!
